100% PURE …AGAIN

In the 1st column this month I provided information and recipes on a 100% pure food – Honey.

Well, here’s another product that meets the 100% Pure category – MAPLE SYRUP

Like honey, it is undiluted, has no artificial chemicals or preservatives and it tastes great.

It takes about 40 gallons of raw sap to produce one gallon of syrup. Wisconsin is one of the world’s largest maple syrup producers and most of the production comes from Aniwa in Central Wisconsin.

Maple Syrup is graded by color – Grade A/Light Amber (most delicate flavor), Grade A/Medium Amber (popular table syrup), Grade A/Dark Amber (strongest flavor), Grade B-darkest and excellent for baking.

You can’t miss with any of these:

MAPLE SYRUP DIP FOR
TOPPING FOR ICE CREAM
OR FRUIT
1 cup (8 oz) cottage cheese
1 TBL mayonnaise
4 TBL maple syrup
Blend all until smooth.

MAPLE POWER SHAKE
1 banana cut into chunks
1/4 cup maple syrup

1/2 cup vanilla ice milk OR 1
cup frozen vanilla yogurt
1 orange in sections
6 oz vanilla yogurt
Put all ingredients in blender –
blend one minute.
Note: Any fruit may be used.

MAPLE GRANOLA
4 cups oatmeal
1 cup coconut
1 cup chopped nuts
1/2 cup whole bran
1/2 cup oil
1/2 tsp salt
1/2 cup toasted sesame seeds
(optional)
1/2 cup maple syrup
Mix all dry ingredients - add
syrup and mix well. Spread on
baking sheet and toast at 325 until
crisp and light brown.

EASY MAPLE BREAD
1/2 cup sugar
1 egg
1 & 1/4 cups milk
3 cups prepared biscuit mix
1 cup chopped walnuts
1/2 cup maple syrup
Several hours before making,
chop walnuts and add to maple
syrup. Let stand and soak
overnight in refrigerator. Preheat
oven to 300. Combine sugar, egg,
milk and biscuit.
Mix and beat at high speed for

30 seconds. Stir in nut mixture
and pour into 2 well- greased loaf
pans. Bake at 350 for 1 hour.

HIGHLAND FLING DRINK
4 parts Scotch or Bourbon
1 part lemon juice
1 & 1/4 part pure maple syrup
Blend thoroughly and serve on
the rocks.

NEW HAMPSHIRE
DAIQUIRI
(From a person who lives there
but make it your own and call it
a WISCONSIN DAIQUIRI)
1/2 cup white rum + 1 TBL
white rum
2 TBL lime juice
1 & 1/2 TBL maple syrup
In cocktail shaker combine
all and add ice cubes. Shake
vigorously and strain into 2
cocktail glasses.

At this autumn time of year
be on the lookout at farm
stands, farmers markets, etc. for
maple syrup. Drewy Farms near
Plymouth is truly a Wisconsin
producer of excellent maple
syrup.
